Ingredients (serves 4–6)
From the garden:
3–4 ripe tomatoes, sliced
1 large handful fresh basil, chopped
1-2 cloves garlic, minced
Pinch of sea salt & cracked pepper
Pantry staples:
1 large baguette
2 Tbsp olive oil (plus extra for bread)
1 Tbsp balsamic vinegar (optional)
Quick Steps
Slice and Mix:
In a bowl, combine minced garlic, sliced basil, olive oil, balsamic (if using), salt, and pepper.
Slice tomatoes and season with salt and pepper.
Taste and adjust seasoning—extra basil or a pinch more salt can really pop the flavor.
Toast the Bread:
Slice the baguette.
Brush lightly with olive oil and toast under the broiler (or on a grill) until golden.
Put it All Together:
Lay the tomatoes on the toasted baguette.
Spoon the mixture over the top.
Finish with a final drizzle of olive oil or a sprinkle of flaky salt.
Enjoy!
Serve as an appetizer, a light lunch with salad, or a quick garden‑to‑table snack.
Tips & Twists
Add crunch: Top with toasted pine nuts or sunflower seeds.
Cheesy upgrade: Slice a clove of garlic and rub the clove over the bread, then add soft goat cheese (or mozzarella) before laying the tomatoes on top.
Flavor boost: A dash of chili flakes or a squeeze of lemon brightens everything.
Low‑carb option: Spoon the tomato mix over sliced cucumbers instead of bread.
With just-picked produce, simple really is best—celebrate those backyard flavors and enjoy!
